CELEBRATE NATIONAL STRAWBERRY ICE CREAM DAY WITH SHEA APARTMENTS

Did you know that this Sunday, January 15, 2012, is National Strawberry Ice Cream Day?! It is a day to remove your spoon from chocolate and vanilla and pay your respects to the delicious flavor of strawberry. There is so much to like about strawberry ice cream, its fresh, creamy and just pure delightful! Shea Apartment Communities will be celebrating this delicious national holiday, we just couldn’t resist.
If you live at the Shea apartments in Laguna Niguel or Club Laguna Apartments, head over to their resident services office between 1:00 – 4:00PM for a scrumptious scoop of strawberry ice cream and give tribute to the amazing flavor.
If you are feeling dangerous, whip up some strawberry ice cream from scratch. Don’t forget to send a picture of the end result.
Here is a strawberry ice cream recipe that will knock your socks off.
Ingredients:
1 pint fresh strawberries, hulled and chopped
1 tablespoon fresh lemon juice
2 large eggs
1 cup sugar, divided
2 cups heavy whipping cream
1 cup milk
1 teaspoon vanilla extract
Directions:
Combine strawberries, lemon juice, and 1/4 cup sugar in a mixing bowl, set aside in fridge for 1 hour.
Grab a large mixing bowl and beat eggs until light and fluffy, about 2 minutes.
Gradually add 3/4 cups sugar, mixing well. Stir in milk and vanilla and mix well.
Add strawberries with juice and mix well.
Gently stir in whipping cream just until combined.
Pour into ice cream maker and follow manufacturer's instructions.
Whola! Now sit back and enjoy the fruits of your labor.
